Eduardo cut his teeth working for the incredible Ariana Occhipinti. He farms organically, mostly in Mt. Etna, and every step of the process is by hand.
A full-flavoured Etna bianco made up of carricante, cataratto and minella bianca. There has very much a classic volcanic mineraloty running through it, with a salty, bordering on dulce de leche-like finish that is very moreish. One to watch.
