Dirty Black Denim Sauvignon Blanc 2020
Notes from Paul Hervy: So savoury! Nose full of broken terracotta, high quality manchego, salty lemon. In the palate it fights hard to stay, overripe apricots and passionfruit coulis, brioche and pie crust. It is a Sauvignon for drinkers not kept in any kind of lane by variety or drinking style, just a perfectly compelling thing to drink. The fruit for this wine is taken from the Galli Estate in Sunbury. After a short maceration (two days), more for structure and longevity than aromatics, it was pressed into old barriques to ferment. Heavy lees work for over a year, bottled with small addition of SO₂.
