Dirty Black Denim Dolcetto Novello 2021
Notes from Paul Hervy: This fruit is taken from the wonderful Corsini Vineyard in the King Valley. Dolcetto with it’s very Australian personality, lighter and crunchier and more acidic than its Northern Italian counterparts. Earthy, savoury fruit with a crunch that feels like you just bit into a stolen apple. The tannin is like a crochet, walking like a spider down those red fruits and acid. 100% destemmed, three days maceration. Pressed to old puncheons for ferment and then a rest before bottling. Small addition of SO₂ (15ppm) after malo, then no more.
