Notes from Paul Hervy: Again we see fruit taken from the Corsini Vineyard in the King Valley. A great source of organic Italian varieties. This is fully destemmed, then given five days to macerate. Then, moved to large format oak to finish the ferment. The ferment was then split, half ageing in the tank the other in large oak. It still speaks so light like a butterfly’s walk across your hand, in the colour department, but it’s bursting with aromatics. Electric acidity with watermelon and high quality balsamic. Bitter blood orange and a handful of herbs. Lip-smacking.
