The Chateau Acid boys never disappoint, with esoteric releases that are packed full of flavour that leave such a lasting impression, you can forgive them for making such small quantitites.

2021 was a welcome season for us, cool and wet, allowing us to pick things perfectly ripe in March after good hang time while still keeping pH and alcohol relatively low (11.7% alcohol, 3.57 pH in the finished wine). Ferments were steady and the élévage was the most hands off it could be, we left this wine in tank untouched for 8 months, very little reduction and everything in it's place.
This wine has been resting in bottle now for nearly a year, we're making a long-term effort to age for longer pre and post bottling, which we believe gives no-so2 wines much more stability, less primary fruit and more depth and character. This Rosato is a good example of this, it's already a fair bit more savoury and gourmand than might be expected from NSW shiraz rosé.
