Chateau Acid Chardonnay 2021
Demo & I had just been talking about the Jura, how the whites are more serious, generally served after their red, lighter counterparts in tastings; when in walks this love letter to the cult French wine region, electricity brimming from it's vessel.
Simon & Charlie of Chateau Acid up their game every year with their wines, but this chardonnay that sees a generous portion of its barrels get a healthy dose of oxidative handling; is next level.
Oxidative handling is basically loose topping of the barrels, less juice in the barrel, the more oxygen it sees, the saltier, nuttier flavours start to sing through, think fino sherry kinda stuff.
Everything is in tune here, well-balanced weight to fruit to saline to acid to finish. We tasted this at about 11am and it was an invigorating experience. Drink at whatever time you like, it's mad. - TT.
